A Colonial Journey

A culinary journey through one of the world’s most coveted gastronomic destinations, curated by celebrated chefs. That is what La Mesa del Marqués offers at Palacio del Inka, a Luxury Hotel, Cusco: set within the historic Casona de los Cuatro Bustos — a landmark building nearly 500 years old that houses the hotel — a gastronomic concept has emerged, inspired by the life of Marqués Juan de Salas y Valdez, its first owner and a figure who embodied the sophistication, power, and hospitality of colonial Cusco.

In those days, the table was already a stage for cultural encounter. Produce arrived from the Andean valleys, traversed long trade routes, and the most select ingredients were brought from Spain to share the same hearth. In colonial Cusco, the Marqués received his guests in private chambers where architecture, aromas, and conversation converged. Today, that spirit has been reimagined in four experiences that invite guests to travel back in time and step into a narrative that weaves together history, terroir, and gastronomy:

  • La Cava del Marqués. A tribute to Peruvian identity. Here, guests can savor a selection of artisanal domestic cheeses — aged with Andean herbs and local curing methods — alongside curated Peruvian charcuterie,

paired with regional wines recommended by the hotel’s sommelier.

  • La Bodega del Marqués. A premium tasting experience set within a historic grotto. Viceregal refinement comes to life in a guided premium tasting: fine Iberian cold cuts, Manchego cheese, and wines of primarily Spanish origin — selected and served at the perfect temperature and cut by our Maestro de Ibéricos and the hotel’s sommelier. The experience takes place in the grotto of the historic Casona de los Cuatro Bustos, a heritage setting.
  • La Herencia del Marqués. An 8-course menu that journeys through Peru’s regions, evoking viceregal hospitality. Inspired by the 16th-century table, this culinary voyage pays homage to an era when gathering ingredients from different climates was a symbol of hospitality and distinction. Coast, highlands, and jungle come into dialogue through contemporary techniques and original flavors. The culinary journey is complemented by a mixed pairing of spirits, craft beers, and Peruvian cocktails that heightens the sensory experience.
  • Tributo a la Agricultura Andina. A vegetarian offering that honors the Pachamama and the ancestral crops of Cusco. This 8-course menu is 100% vegetarian (with a vegan option) and celebrates tubers, grains, and vegetables adapted to the altitude and Andean climate, reclaiming their flavor and millenary history through a contemporary lens. Accompanied by a mixed pairing, the experience invites guests to reconnect with the land, to understand the power of agricultural cycles, and to recognize the work of the communities that have preserved these crops for generations.
